Make Do Monday – Potato shortbread

This week, we have another potato-based wartime recipe to share with you. Potatoes were something that families could grow on their own (for example, in an allotment) and add to their food rations. Some creativity was welcomed by many, as there is only so much plain mashed potato you can have!


3 oz of margarine

2 0z of rice flour

A small amount of almond flavouring

4 oz warm mashed potato

3 oz plain flour

2 oz caster sugar

A pinch of salt


1. Cream the margarine and sugar in a bowl, then add the mashed potato and beat well.

2. Add the rice flour, salt and flavouring to the mixture.

3. Now add the plain flour and press it into the mixture with a spoon, it will soon start to look and smell like shortbread!

4. Roll it out and put on a baking tray, use a fork to make a nice pattern if you like and bake in a warm oven for about 60 minutes.

The result is a great accompaniment to a pot of afternoon tea.
