Make Do Monday – Honey cakes

Over the weekend Lindsay from Gordano homefront baked this recipe for Honey cakes which is a nice and easy wartime inspired recipe, consisting of only one teaspoon of sugar!


1 teaspoon of sugar
2.5  ounces of margarine
2 teaspoons of honey
6oz self raising flour
1 level teaspoon of cinnamon



1. Beat sugar and margarine until a soft cream consistency.

2.Sieve flour and cinnamon then add to mixture.


3.Mix with a wooden spoon until it binds together, then knead with your fingers until you have a soft dough. It might not bind together straight away but keep kneading it.

4. Roll the soft dough into 16 even pieces and place them on a lightly greased baking tray, flatten them slightly and put them in a moderately hot oven to bake for about 15 minutes or until golden.

5. Let the cakes cool down while you boil the kettle, what a lovely afternoon treat!
